Patacake Patacake Bakers Man

Two weeks ago I baked my very first cupcake.

We were chilling out after dinner with the other half turned and said that he really really had a craving for cupcakes - you know the ones that are in every shop, piled high with icing, well those ones.

So a trip to the shop for cupcakes was suggested when I noticed he had googled how to make cupcakes. Turns out he had a craving for home baked cupcakes, ladies always find out the specifics before you agree to get your man something. So as I had unwittingly committed to baking cupcakes we went in search of ingredients and it tends to be a little bit more difficult for us that most as we have to avoid all things chocolate which isn’t easy when you are looking to bake a tasty treat. We settled on vanilla. Turns out it was a pretty good choice as after just under an hour we settled down, covered in flour, with sticky hands to eat the fruits of our labour. You can take my word for it, they were tasty.

So tasty that I decided to make more last night to take with us to the other halves parental home tonight when we pop out for dinner.

If you are a cupcake fan why not try them out, they are pretty easy to bake and a nice little treat. The recipe I have below makes about 12 cupcakes with some left over batter for licking the spoon and bowl - take one guess which one of us that was :P

Buns:

1/2 cup of plain flour
2/3 cup of granulated sugar
3 large eggs
Teaspoon of pure vanilla extract
Pinch of salt
1 1/2 teaspoons of baking power

Using a mixer, beat together the butter and sugar until light a fluffy then add in the eggs beating well, before adding the vanilla.

In a separate bowl mix the flour, salt and baking powder.

On the slow speed setting add in the flour mixture to the butter mixture and beat well.

Grease 12 bun cases and place on a bun tray before filling the cases with the batter. Bake for around 20 minutes at 170 degrees or until golden brown.

Vanilla Icing:

2 cups of icing sugar
1/2 cup of butter
1 teaspoon of vanilla extract
2 tablespoons of milk

Cream the butter until smooth and then add the vanilla before beating a bit more. Slowly add in the sugar and beat well. Add the milk and continue to blend for 3-4 minutes until mixture is creamy and smooth.

Once the buns have completely cooked, add the icing and top with sprinkles if desired.
